Tomato, Avocado, and Pecan Salad with Goat Feta Cheese

Ingredients

  • For the salad

  • Cherry tomatoes, halved 1 pint
  • Avocado 1 sliced
  • Table One Goat Feta Crumbles 2 oz
  • Pecans, roughly chopped 1/3 cup
  • Fresh chives, chopped 2 Tbsp
  • For the dressing

  • Balsamic vinegar 2 Tbsp
  • Dijon mustard 1 tsp
  • Garlic clove, minced 1
  • Dried basil ½ tsp
  • Extra virgin olive oil 3 Tbsp
  • Salt and pepper

Preparation Instructions

  • STEP 1For the dressing, combine all ingredients in a jar with a tight-fitting lid. Shake vigorously, or until dressing is emulsified. Add a splash of water to thin if dressing is too thick. Season with salt and pepper, if needed. Set aside.
  • STEP 2In a medium bowl add tomatoes, avocado, goat cheese, pecans, and chives. Gently toss with the dressing. Season well with salt and pepper.
  • STEP 3Best when placed in fridge to allow flavors to merge for 20 minutes before serving.
