Ingredients

  • Slaw

  • Purple cabbage, thinly sliced ½ head
  • Shelled edamame 1/3 cup
  • Carrot, grated 1 large
  • Yellow or red bell pepper 1 sliced thin
  • Green scallions, green and white parts sliced 2
  • Chopped cilantro ¼ cup
  • Peanuts, chopped 2 Tbsp
  • Dressing

  • Peanut butter 3 Tbsp
  • Garlic clove 1, minced
  • Fresh ground ginger ½ tsp
  • Soy sauce 1 – 2 Tbsp
  • Rice wine vinegar 1 Tbsp
  • Honey 1 Tbsp
  • Sesame oil 2 tsp

Preparation Instructions

  • STEP 1For the dressing, in a small bowl, whisk together all ingredients until smooth and combined. If dressing is too thick, add a splash of water. Season with salt and pepper, if needed. Set aside.
  • STEP 2For the salad, combine cabbage, edamame, carrot, bell pepper, scallions, cilantro, and peanuts in a large bowl. Pour dressing over the slaw and toss well to coat.
