Sweet Potato Egg Nests with Goat Cheddar

Ingredients

  • Sweet potato 1 large, or 2 small
  • Olive oil 1 Tbsp
  • Salt and pepper
  • Table One Goat Cheddar, Loaf, shredded, plus more for topping 1 cup
  • Cooked bacon, diced 3 slices
  • Eggs 6
  • Salt and pepper

Preparation Instructions

  • STEP 1Preheat oven to 400 degrees F. Line muffin tin with foil cupcake liners and spray with non-stick cooking spray.
  • STEP 2Peel sweet potatoes and shred using a coarse cheese grater. Add shredded potato to a large mixing bowl with olive oil, and season with salt and pepper. Toss well to combine.
  • STEP 3Spoon sweet potato mixture into the foil liners, and up the sides to create the “nest.” Bake for 15 minutes, or until nests begin to turn golden brown.
  • STEP 4Divide cheddar goat cheese evenly into each sweet potato nest. Top with diced bacon. Crack an egg over top of the cheese and bacon.
