STEP 1For the dressing, combine all ingredients in a jar with a tight-fitting lid. Shake vigorously, or until dressing is emulsified. Season with salt and pepper, if needed. Set aside.
STEP 2Gently toss kale, avocado, roasted beet, cucumber, blueberries, Parmesan, cranberries, and almonds together in a large bowl.
STEP 3Add dressing and toss to coat. Serve immediately.
