Superfood Kale & Shredded Parm Salad
For the Salad
- Kale, chopped 1 large bunch
- Avocado, pitted and diced 1 large
- Roasted beet, peeled and sliced 1
- Cucumber, sliced and quartered 1 small
- Fresh blueberries 1 cup
- Table One Shredded Italian Parmesan ½ cup
- Dried cranberries or raisins ¼ cup
- Slivered toasted almonds ¼ cup
For the Dressing
- Extra virgin olive oil ¾ cup
- Sherry vinegar ½ cup
- Honey 1 tsp
- Dijon mustard 1 tsp
- Minced shallot 2 tsp
- Salt and pepper
STEP 1For the dressing, combine all ingredients in a jar with a tight-fitting lid. Shake vigorously, or until dressing is emulsified. Season with salt and pepper, if needed. Set aside.
STEP 2Gently toss kale, avocado, roasted beet, cucumber, blueberries, Parmesan, cranberries, and almonds together in a large bowl.
STEP 3Add dressing and toss to coat. Serve immediately.
